I feel like this watermelon recipe is too simple to really count as a recipe, but it’s one of my favorite dishes this summer so I had to share it with you guys!
The inspiration came from a restaurant called YardBird Southern Table & Bar, which came highly recommended from a friend, mostly because of their fried chicken.
Normally when I hear the words “fried chicken,” I tune out because… gluten. But this place has GLUTEN FREE FRIED CHICKEN… MADE IN A DEDICATED GLUTEN FREE FRYER.
Sorry. I just get excited about that sometimes.
Now, I know fried food isn’t the healthiest option, but seriously. I hadn’t had fried chicken in over ten years. PLUS they use really high quality chicken, brined for 27 hours, and fried in actual lard.
(Yes, I said lard, and yes that is a good thing. Here’s why saturated fat isn’t something to be feared.)
Anyway… One of their famous dishes is “Chicken ‘n’ Watermelon ‘n’ Waffles”, made with their signature spiced watermelon. I couldn’t partake, because their waffles are glutenous, but my hubbs ordered it and described the flavors to me.
Honestly, when I first heard about the spiced watermelon, I wasn’t interested one bit. Why would you mess with a perfectly good fruit by adding lime juice and cayenne pepper? I’m not really into making things needlessly spicy just for funsies.
BUT. When we got home, my husband wanted to try to recreate it. We had watermelon, and limes, and cayenne pepper, so why not! I was hesitant to try it at first… But it was delicious.
So delicious that now I don’t want to eat plain watermelon.
I added the cilantro because:
a.) it’s pretty.
b.) lime and cilantro always go nicely.
c.) cilantro helps detox heavy metals, and we all could use a little more of that in our lives. :)
So all that to say… This cilantro-lime watermelon is an awesome addition to your summer barbecue.
