If you’re a fan of cookie dough ice cream, you should probably try these immediately.
My dad was the inspiration for this paleo cookie dough ice cream sandwich concoction. He made a gluten-free version of these for a family event a few weeks ago, and they were absolutely delicious. As I was
eating devouring them, my brain immediately went to work figuring out how I could make these grain-free and dairy-free. It was a rough few weeks of having to taste-test these (woe is me!) but I managed to pull through.
The outer layers are made of scrumptious paleo cookie dough, and the filling is a dairy-free version of a classic custard ice cream base. The ice cream part is a bit labor intensive, so I won’t judge you one bit if you use store bought ice cream instead. Unfortunately coconut milk ice cream from the store is never as good as I want it to be, so I usually stick to homemade.
Side note: If you’re on a paleo ice cream kick, you might want to check out this cookbook by Kelly Brozyna. It’s full of amazing dairy-free ice cream recipes! The recipe I’m using isn’t from her book, but I’ve been swooning over her recipes a lot lately as the summer heat is kicking in.
You can experiment with different flavors combinations too. I just made one with double chocolate cookies and mint chocolate chip ice cream… I’m still tweaking the flavors on that one, but I’ll share it with you guys as soon as it’s ready!
