Broccoli salad is my new favorite salad!!
It works really nicely as a side dish to just about any meal. It’s also great to bring to a potluck, because it feels kind of fancy and different, but it’s super easy to throw together, and it goes well with everything!
I have been working on clearing excess estrogen from my body lately, and cruciferous veggies play a big role in that process because they supply the liver with the nutrients it needs to conjugate estrogen. (Fun, right?)
I’m trying to eat a few cups of cruciferous veggies every day, so I’ve gotten creative with how I prepare them.
A good friend of mine made a broccoli salad for a potluck several years ago. I thought it was amazing, and I made a mental note to make it sometime… but then I forgot all about it.
The surplus of broccoli in my life lately got me thinking about that broccoli salad again. I know her recipe used some sugar and possibly some cheese and stuff that I don’t usually eat, so I decided to make my own paleo-friendly version… It’s so good I have made it every day this week!
Note: If your diet needs to be very low sugar, you can replace the raisins with diced green apple, or omit the fruit altogether.
If you have any other favorite ways of preparing cruciferous veggies, send them my way please!!
