The Hamburger Salad is one of my new favorite meals because it’s quick, easy, delicious, and satiating.
When I was in college, I used to eat plain ground turkey over a bed of raw spinach for breakfast almost every day. It was cheap, quick, and nutritious. As a recovering vegetarian who was used to eating a bowl of cereal every morning, getting used to eating meat for breakfast was a huge deal, so once I found something that was nearly as quick as cereal, I stuck with it. My spinach/turkey combo wasn’t particularly delicious, but it provided me with plenty of energy to get through my 12+ hour days at school.
Sometime over the last several years I forgot about that meal. I decided to resurrect it a few weeks ago, but now that I have a little more cooking experience under my belt, I thought I’d spice it up a little bit and make it into a meal that we would actually enjoy eating. Enter: The Hamburger Salad.
I swapped out the ground turkey for ground beef because I don’t have a good source for pastured/free-range ground turkey (and because I’m not afraid of red meat anymore) but you can use any kind of ground meat you’d like. (If you know of a good ground turkey source, let me know!)
I also added some mustard, sauerkraut, bacon, and avocado (because, duh.) Feel free to add your favorite hamburger toppings. Next time I make this I’m going to add caramelized onions and mushrooms, but you can get as wild as you want… Fresh tomato? Olives? Pineapple slices? Go nuts.
